Honey Apple Pancakes


1 1/4 cup flour
2 teaspoons baking powder
1/2 teaspoon apple pie spice
1/4 teaspoon salt
1/8 teaspoon baking soda
1 egg
3/4 cup apple juice
1/3 cup milk
2 tablespoons honey
1 tablespoon oil


  1. Combine flour, baking powder, apple pie spice, salt and baking soda in a medium mixing bowl. Beat together egg, apple juice, milk, honey and oil in another bowl. Add all at once to flour mixture, stirring just until combined but still lumpy. Heat a lightly greased skillet or griddle over medium heat.
  2. Pour about 1/4 cup batter for each pancake onto skillet or griddle. Cook for 1-2 minutes or until the pancakes have a bubbly surface and slightly dry edges. Turn and cook for 1-2 minutes more or until golden brown.
