Apple And Cranberry Steamed Pudding With Custard Recipe

Ingredients:

2 x Apples, diced
1 ounce Dry cranberries
6 ounce Sugar
6 ounce Butter
2 Tbsp. Fresh tarragon
8 ounce Flour
1 ounce Baking pwdr
4 Tbsp. LowfatLowfat milk
500 ml Lowfat milk
3 ounce Sugar
1 x Vanilla pod
4 x Egg yolks
Splash of brandy
tsp Nutmeg
1 Tbsp. Cranberries

Directions:

  1. Beat together the butter and sugar and leave to one side. In a pan, heat a little sugar that should go straight to caramel. Add in the two diced apples and stir. Heat in some butter and a small amount of water to make a syrup. Add in the fresh tarragon and allow to heat through.
  2. Mix the Large eggs, flour and baking pwdr into the sugar and butter. Add in the lowfat milklowfat milk. Place the apple mix into a greased bowl. Spoon the egg and flour mix on top of this. Cover with foil and place on a baking tray filled with water. Put into the oven and cook for one hour.
  3. To make the custardcustard, mix together the lowfat milk and sugar in a pan over a medium heat. Add in the 4 egg yolks to this and stir. Add in the vanilla pod and stir till thickened.
  4. Remove the puddingpudding from the oven and turn upside down on a large plate. Pour custard around the outside and garnish with cranberries and nutmegnutmeg. Pour brandy on top and serve immediately.
 

Cameros Cheese and Apple Pastries with Honey Ice Cream

Ingredients:

1 lb flaky pastry
1 lb fresh Cameros (fresh goat's milk) cheese
6 cooking apples
1/2 cup sugar
1/2 cup cream

For the ice cream:
1 cup milk
1 cup honey
6 sheets of gelatin (or 1 packet)
1/2 cup egg whites
1/4 cup sugar
1 cup cream

Directions:

  1. For the ice cream, bring the milk with the honey to a boil, then add the gelatin and leave to cool. Beat the white of egg with half of the sugar, and the cream with the remaining half. Incorporate all the mixtures and place in the freezer.
  2. Finely chop the cheese and heat in a double saucepan with 1/2 cup sugar and 1/2 cup cream, stirring constantly until a smooth mixture forms. Roll out the pastry and cut into 6 rectangles. Make a few holes in it with a fork.
  3. Spread over the cheese mixture and arrange the sliced apple on top. Brush with beaten egg and bake at 300 degrees F for 15 minutes.
  4. Serve topped with a spoonful of honey ice cream.
 

Apple Raisin Muffins

Ingredients:

1 cup water
2 cups sugar
2 cups grated apples
2 cups raisins
1 cup (2 sticks) butter
2 teaspoons ground cinnamon
2 teaspoons freshly grated nutmeg
1/2 teaspoon ground cloves
1 cup chopped walnuts
2 teaspoons baking soda
3 1/2 cups all-purpose flour

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Combine the water, sugar, apples, raisins, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.
  3. In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased miniature muffin tins with batter to the top. Bake for 15 minutes.
 

Apple Vanilla Cake

Ingredients:

250 grams flour
125 grams butter
125 grams  sugar
1 egg
1/2 pack Baking powder

For the icing:

3/4 liter cream
125 grams  sugar
1 pack vanilla sugar
1 pack pudding powder
4 apples

Directions:

  1. Process ingredients to shortcrust and put it in the fridge.
  2. Peel the apples - not too thin.
  3. In a greased casserole dish spread the dough and sprinkle on the apples, boil the pudding with whipped cream and remaining ingredients and pour over the apples.
  4. Bake at 180° C for about 45 min.
 

Apple Cake

Ingredients:

5 apple - peeled, cored and sliced
2 cups all-purpose flour
1/2 teaspoon salt
4 teaspoons ground cinnamon
4 teaspoons baking powder
4 eggs
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 cup chopped walnuts
4 teaspoons white sugar
1 teaspoon ground cinnamon

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C) lightly grease and flour a 9x13 inch pan.
  2. Sift together flour, salt, cinnamon and baking powder. Set aside.
  3. In a large bowl, beat eggs and sugar for 15 minutes on high speed with an electric mixer. Add oil and blend in.
  4. Add flour mixture and mix well. Add vanilla. Fold in apples and nuts. Pour batter into 9x13 inch pan.
  5. In a small bowl, mix 4 teaspoons sugar with 1 teaspoon cinnamon. Sprinkle over cake.
  6. Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes or until a toothpick inserted into center of cake comes out clean.
