Apple Cranberry Coffee Cake with Bourbon Sauce


4 cups unpeeled chopped apples
1 cup sugar
2 eggs (slightly beaten)
1/2 cup corn or canola oil
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1 cup raisins
3/4 cup butterscotch bits
1 cup broken nuts (walnuts or pecans)
1 cup chopped fresh cranberries

Bourbon Sauce:

1/2 cup brown sugar
3 teaspoons butter
1/4 cup Bourbon


  1. Preheat oven to 325F. Prepare pans.
  2. Mix apples and sugar in a large bowl and set aside. Mix eggs, oil and vanilla in a separate bowl. Combine flour, baking soda, cinnamon, allspice and salt with a fork in yet another bowl. Next, combine egg mixture with apples and sugar. Combine flour mixture with apple mixture. Mix thoroughly; it's very chunky. Then add raisins, cranberries, nuts and butterscotch bits into mixture until evenly distributed.
  3. Bake for 25-30 minutes. You may need to bake a little longer for loaf or bundt pans. Check with toothpick. Serve warm or at room temp.

For added moisture, drizzle with Bourbon Sauce. (see below.)

  1. Melt butter over medium heat. Add brown sugar and Bourbon. Simmer on low heat, stirring often to cook off some of the alcohol, about 5 minutes. Poke holes in surface of warm cake with wooden skewer and drizzle with sauce. Cover and let stand for a least an hour before serving. Freezes well.

Apple Cookies


125 gr margarine
1 small cup of sunflower oil
3 cup of flour
½ tea spoon of sodium bi carbonat
1 cup of sugar powder
1 cup of naturel yoghurt (or greek yoghurt)

4 middle size of cooking apples
1 small cup of sugar
½ lemon juice
½ tea spoon cinnamon


  1. Pre-heat the oven 180 C. Lighly grease largely baking pan.
  2. Knead the margarin, flour, sunflower oil and yoghurt.
  3. Cut the dough in 3 equal pieces.
  4. And spread the dough 3mm thick as a big round…..Then cut it in 12 equal triangle pieces.
  5. Put some of the stuffing (fort he stuffing: peel the apples and grate them. Cook them into a pan with the sugar until it gets dry and colored…And the lemon juice and the cinnamon and stir a while) onto the pieces and roll them.
  6. Put them on the baking pan and cook till they gets pink color min 25-30 mins. When they are cooked leave the pan for being cool.
  7. Pour over the sugar powder over the cookies and serve them.
  8. PS: You can add walnuts into the stuffing if u want.

Apple Cake with Cinnamon & Walnut


3 eggs
3 small cup of sugar
4-5 small cup of flour
1 small cup of milk
1 small cup of sunflower oil
1 lemon’s skin (grated)
1 pack baking powder
1 pack vanilin
½ cup of walnut (finely chopped)
1 desert spoon of cinnamon
1-2 cooking apples


  1. Pre-heat the oven 170 C. Lightly grease the cake mould.
  2. Beat the eggs and sugar.
  3. Then add milk, oil and the rest of the ingredients except walnut and the apples. Beat them more 1-2 minutes.
  4. Then cut the apples as cubes and finely chopped the walnuts. Stir them together.
  5. Pour them into the mould.
  6. Put into the oven for 30-35 mins watch very often after 30 mins. Then its ready for serving!

Apple Walnut Cake


1 cup butter, room temperature
2 cups granulted sugar
3 eggs
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups peeled chopped fresh apples
1 cup coarsely chopped walnuts


  1. In a mixing bowl, cream together the butter and sugar until light. Add the eggs, one at a time, beating after each addition. Stir in the vanilla. Sift together the flour, baking powder, baking soda, and salt, and stir in the creamed butter mixture.
  2. Stir in the chopped apples and walnuts. Spread the cake batter into a greased and floured 13x9-inch baking pan, and bake in a 350° oven for 45 minutes, or until a wooden pick or cake tester inserted in centre comes out clean. Cool for at least 30 minutes before serving. Serve with whipped cream or a caramel sauce.

Apple Yoghurt Cake


1 tub of natural yoghurt (Use the little yoghurt tub as a measuring tool for the flour, sugar and oil.)
3 tubs of flour
2 tubs of sugar
3 eggs
2 apples, peeled and cut into pieces
1 tub of vegetable oil
1 small sachet of yeast
1 small sachet of vanilla sugar
1 pinch of salt


  1. Mix all the ingredients until you have a smooth paste. Add the apples. Place the mixture into a cake tin and bake at 180° for 30 – 40 minutes. You could also replace the apples with pears or even cherries.
