Apple Cider Pudding Cake

Ingredients:

1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 large egg
1 cup brown sugar, packed
1/3 cup milk
2 tablespoons melted butter
1 teaspoon vanilla
2 cups chopped apple
1 cup apple cider
1/2 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup brown sugar

Optional Streusel:
1/4 cup flour
1/4 cup brown sugar
2 tablespoons butter

Directions:

  1. Butter an 8-inch square baking dish. Heat oven to 350°.
  2. In a bowl, combine the flour, baking powder, salt, soda, 1 teaspoon cinnamon, ginger, and nutmeg. In another bowl, whisk together the egg, 1 cup brown sugar, milk, melted butter, and 1 teaspoon vanilla. Stir in dry ingredients and chopped apples until well blended. Spread in prepared baking pan.
  3. In a small saucepan, bring apple cider, 1/2 teaspoon cinnamon, 1 teaspoon vanilla, and 1/2 cup brown sugar to a boil. Pour slowly and carefully over the batter. Bake for 45 to 50 minutes. If desired, sprinkle with prepared streusel (below) about 10 minutes before done.
  4. Optional streusel: Combine 1/4 cup flour, 1/4 cup brown sugar, and 2 tablespoons butter.
 

Apple Cranberry Cake

Ingredients:

4 large apples, peeled, cored, finely chopped (about 4 to 4 1/2 cups chopped apples)
1 1/2 cups coarsely chopped cranberries
1 tablespoon lemon juice
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 large eggs
1/2 cup vegetable oil
2 cups granulated sugar
1 1/2 teaspoons vanilla
1 cup chopped pecans or walnuts

Directions:

  1. Heat oven to 350°. Grease and flour a 9x13-inch baking pan or spray with baking spray with flour.
  2. Combine chopped apples and cranberries in a bowl; toss with the lemon juice and set aside. In another bowl combine the flour, baking soda, salt, and cinnamon; set aside. In a mixing bowl with electric mixer, beat the eggs with oil, sugar, and vanilla until smooth and well blended. Slowly beat in the dry ingredients until moistened. Stir in apple-cranberry mixture and the chopped nuts. Spread batter in prepared pan. Bake for 45 to 55 minutes, or until the cake springs back when lightly touched with a finger.
  3. Cut into squares to serve, topped with powdered sugar or caramel sauce, or frost the cooled cake with cream cheese frosting.
 

Old Time Apple Pie

Ingredients:

pastry for a 9-inch double crust pie
6 cups tart apples, sliced and peeled
1/4 cup sugar
1/2 cup light brown sugar, firmly packed
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon lemon zest
2 teaspoons lemon juice
1 tablespoon margarine

Directions:

  1. Line a 9-inch pie plate with the pastry.
  2. Mix next 8 ingredients and fill pie shell, laying apple slices flat.
  3. Dot with the butter or margarine.
  4. Roll out top crust and place it over the apple mixture, cutting slits in several places for steam to escape. Moisten edges of crust well with cold water and adjust top crust. With fingers or fork, pinch two crusts together to make a tight seal around pie.
  5. Bake in a hot oven, 450 degrees, for 15 minutes. Reduce heat to 350 degrees and bake 45 to 50 minutes longer.
 

Fried Apple Pies

Ingredients:

8 ounces dried apples
1 cup water
1/3 cup sugar
1 tablespoon butter
1 can (10 ounces) refrigerated flaky biscuits
vegetable oil, for frying

Directions:

  1. Combine apples and water in saucepan; bring to a boil. Cover, reduce heat, and simmer for 30 minutes or until tender. Remove from heat and let cool, mashing slightly if pieces are large. Stir in sugar and butter; set mixture aside.
  2. Roll each biscuit into a 5-inch circle on a lightly floured surface. Place about 2 tablespoons apple mixture on half of each biscuit circle. To seal pies, dip fingers in water and moisten edges of circles. Fold in half, making sure edges are even. Using a fork dipped in flour, press edges firmly together to seal. Pour oil to a depth of 1/2 inch into a heavy skillet, or use deep fryer. Fry pies in hot oil (370°) over medium-high heat golden, turning once. Drain well on paper towels. Makes 10 little pies.
 

Caramel Apple Pecan Pie

Ingredients:

2 pastry shells, 9-inch
4 Granny Smith apples peeled and cored, thinly sliced
1/2 cup Pecans chopped
1/4 cup Sugar
1/4 lb Caramels coarse chopped
2 tb Flour
1/4 cup Milk
Milk for top
Sugar for top

Directions:

  1. Preheat oven to 375°. Fit 1 round of rolled pastry into a 9-inch pie pan.
  2. In a large bowl, toss together apples, pecans, sugar, caramels, flour and milk. Spoon mixture into pie shell.
  3. Top with the remaining rolled pastry. Fold the edge of the top pastry under the bottom pastry. Pinch together and flute the edge all around with a fork. Cut several slits in the top so the steam can escape during baking. Brush top with milk and sprinkle with sugar.
  4. Bake until crust is golden brown, about 45 minutes. Pie is best served slightly warm. 8 Servings
