Apple Cheddar Brunch Pizza

Ingredients:

1/4 cup flour, divided
1 loaf (1 lb size) frozen yeast bread dough, thawed
5 cups sliced tart apples
1/2 cup packed brown sugar
1/2 cup white sugar
2 teaspoons apple pie spice (or cinnamon)
1/4 teaspoon nutmeg (omit if using apple pie spice)
5 tablespoons butter, cut into small pieces
2 cups shredded cheddar cheese

Directions:

  1. Heat oven to 350F degrees. Spray a cookie sheet with nonstick spray.
  2. Sprinkle work surface with flour, roll out bread dough until slightly larger than the sheet. Place dough on sheet, stretching to fit, roll edges slightly to form a shallow rim. Spread apples evenly over dough.
  3. In a small bowl, combine sugars, 2 Tbls flour, cinnamon and nutmeg (or apple pie spice). Mix well and sprinkle over apples. Dot with the butter. Sprinkle with cheese evenly over.
  4. Bake until the apples are tender and the cheese is bubbly, 25-35 minutes. Serve warm.
 

Caramel Apple Dessert Pizza

Ingredients:

1 (18 oz) pkg. of refrigerated sugar cookie dough
1 (8 oz) pkg cream cheese
1/2 cup peanut butter
1/2 cup packed brown sugar
2 tablespoons milk
4 cups peeled tart apples
1 can lemon lime soda
1 teaspoon cinnamon
1/2 cup caramel ice cream topping over apples
1/2 cup chopped pecans

Directions:

  1. Press one refrigerated sugar cookie dough into a 14 inch pizza pan and bake at 350 degrees for 15 minutes or until golden brown. Cool thoroughly on wire rack.
  2. Beat together cream cheese, peanut butter, brown sugar and milk until smooth Spread over the cooled crust. Combine apples and soda. Drain well and sprinkle apples with cinnamon. Arrange apples on pizza. Drizzle caramel ice cream topping over apples and sprinkle with chopped pecans if desired. Cut into wedges like pizza.
 

Cinnamon Apple Dessert Pizza

Ingredients:

1 package (18 1/2 oz.) white cake mix
1 1/4 cup quick-cooking rolled oats
1/2 cup butter or margarine
1 egg
1/2 cup chopped nuts
1/2 teaspoon ground cinnamon
1 can (21 oz.) apple pie filling
1/3 cup sugar

Directions:

  1. Heat oven to 350 degrees. Grease a 12 to 15 inch pizza pan or a 13 x 9 inch pan. In large bowl, using electric mixer combine cake mix, oats and 6 tablespoons softened butter until crumbly. Scoop out 1 cup of these crumbs and set aside for topping. To remaining crumbs, blend in egg. Press this mixture evenly into prepared pans. Bake for 12 minutes. Turn reserved crumbs into bowl and add remaining 2 tablespoons margarine, nuts, sugar and cinnamon, beat at low speed until well mixed. Spread apple pie filling on top of baked base. Sprinkle with cinnamon crumb mixture.
  2. Return to oven and bake about 20 to 25 minutes or until golden brown. Cool and cut into wedges or squares. Serve with ice cream.
 

Apple Lasagna

Ingredients:

2 cups shredded cheddar cheese
1 cup ricotta cheese
1 egg
1/4 cup white sugar
1 teaspoon almond extract
2 cans (20 ounce ea) apple pie filling
8 lasagna noodles, cooked and drained
6 tablespoons all-purpose flour
6 tablespoons packed brown sugar
1/4 cup quick cooking oats
1/2 teaspoon ground cinnamon
1 dash ground nutmeg
3 tablespoons butter or margarine
1 cup sour cream
1/3 cup packed brown sugar

Directions:

  1. Combine cheddar cheese, ricotta cheese, egg, white sugar, and almond extract in a medium bowl. Blend well.
  2. Spread one can apple pie filling over the bottom of a greased 13 x 9 inch pan. Layer with 1/2 of the noodles, and then the cheese mixture. Layer again with remaining noodles, and the second can of pie filling. Combine flour, 6 tablespoons brown sugar, oats, cinnamon, and nutmeg in a small bowl. Cut in butter or margarine until crumbly. Sprinkle over top.
  3. Bake at 350 degrees F (175 degrees C) for 45 minutes. Cool for 15 minutes.
  4. Meanwhile, prepare garnish by blending sour cream and 1/3 cup brown sugar in small bowl until smooth. Cover, and refrigerate. Serve warm apple lasagna with sour cream garnish.
 

Bistro Apple Pizza

Ingredients:

2 tsp. garlic, minced
2 Tbsp. olive oil
1 12-inch prepared pizza dough crust
2 cups fresh spinach, coarsely chopped
1 1/2 cups Red Delicious, Golden Delicious, or Granny Smith apples cored, peeled and thinly sliced (or chopped)
1 cup shredded low-fat, part skim Mozzarella cheese
1 cup crumbled Blue, Gorgonzola or Roquefort cheese
1/2 cup shredded parmesan cheese
1 tsp. dried leaf oregano

Directions:

  1. For each pizza: Heat oven to 450° F. Saute garlic in olive oil over medium heat for 1-2 minutes. Remove from heat.
  2. Brush olive oil blend onto pizza crust.
  3. Distribute spinach evenly onto crust.
  4. Sprinkle on apples.
  5. Blend mozzarella cheese, blue cheese and parmesan cheese. Distribute evenly over apples.
  6. Sprinkle on oregano. Bake for 12-15 minutes or until cheese boils and crust is brown.
